Roasted Parsnip Fries

  • 2 large parsnips
  • 1 Tbsp. melted coconut oil
  • Salt and Pepper to taste


  1. Preheat oven to 450 degrees.
  2.  Trim the ends of parsnips and cut into 1⁄2 inch sticks (French fry shape).
  3. Place fries into a large bowl and add oil, salt and pepper.
  4. Toss well.
  5. Place parsnips flat on a baking sheet lined with parchment paper.
  6. Bake for 25-30 minutes.
  7. Checking once and rotating to ensure even cooking.
